Cauliflower, bean and egg salad

Ingredients

·         ½ cauliflower cut into florets

·         a handful of green beans

·         2 eggs

Dressing

·         2 tablespoons of apple cider vinegar

·         2 tablespoons of extra virgin olive oil

·         1 teaspoon of Dijon mustard

·         Salt and pepper to taste

Method

Boil the eggs in water for 10 minutes. Remove from boiling water, add cold water and then peel the eggs and cut into quarters.

Steam the cauliflower florets and beans (top and tail the ends) for 5 minutes.

Cool under running water.

Add the cauliflower, beans and eggs together in a salad bowl.

For the dressing, combine the vinegar, oil, Dijon mustard and salt and pepper in a jar according to taste.

Finally, add the dressing to the salad. 

This is a super quick and easy salad to make in about 10 minutes.
